Maize is an important food grain used in food, feed and many industrial applications. The grains contain about 6% hard pericarp, 10-11% germ and 75%-80% endosperm. The germ contains 32-36% edible oil. The removal of the hard pericarp is essentials to make the grains easily digestible and palatable.
The flour consists of milled maize grain from which course material like husk bran are removed. Maize flour and semolina are produced in a mini grain mill. The maize oil is expelled oil form maize germ and very rich source of phospholipids and tocopherils.
APPLICATION OF PRODUCTS
Maize flour is used for making a variety of preparations like roti, thick porridge, this porridge, pancakes. It is also admixed with wheat flour or sorghum flour to improve the eating quantity. Maize semolina is used for making various preparations for which wheat or rice semolina are conventionally used e.g. sweet or savoury soft-cooked bhat type items. Maize oil is valuable edible oil and a nutritive product. The maize germ oil contains more than 60% linoliec acid which is a good cholesterol reducing agent. It makes a good choice for heart patients. It is excellent frying oil.
PRODUCTION PROCESS
Maize grains are separated using a maize sheller. These are winnowed to remove dirt, dust cob pieces and later passed through a de-stoner to remove stone pieces and extraneous matter. The cleaned grains are moistered to loosen the pericarp. The conditioned grains are passed through a mini grain mill wherein the de-husking and de-germing take place simultaneously yielding about 70% maize grits having less than 12% fat. The large grits are ground into flakable grits, coarse and fine semolina & flour in a plate grinder with reduced r.p.m. The coarse grinding of incipiently moistered grain in the plate mill followed by sieving, aspiration and gravity separation help in removal of most of the germ fraction. The oil content in the germ fraction is around 17-18%. Further conditioning of the grain with 6% moisture, removes both germ and the bran together and the grit yield increases by 5% and bran removal is more complete.
