INTRODUCTION
The synthetic fats are known in India by different names such as "Vanaspati", "Dalda Ghee", "Hydrogenated oil" etc. Perhaps because vanaspati ghee is manufactured with Vegetable oils and there is not much change in the components of vegetable oil after it has undergone the process of refining and hydrogenation, the name "Vanaspati" has been given to this refined oil. The term has now been accepted and is popularly known as vanaspati ghee. On the basis of processing vanaspati ghee has been defined "as the hydrogenated oil which has been subjected to a process by which hydrogen is added to the molecules of the oil to make it semi solid instead of liquid".
The story of vanaspati in India goes back to almost 50 years when it made its first appearance on the shelves of India shops through imports from Holland. With the appearance and flavor akin to those of the traditional ghee, its relative cheapness soon made it very popular among the Indian masses.
Historically the manufacture of vanaspati through hydrogenation of edible oil was under taken to meet the shortage of ghee, butter and other animal fats. But it has been more used as cooking media and rarely as a spread like ghee, butter etc. Since past ten years, it is being accepted more as supplement to edible oil.
