INTRODUCTION

Sattu (fried gram flour) is popular dry food in Eastern region part of North West. It is also used as dry food. It is healthy food as well as cheap. It can be used by all classes of people of the society. It is prepared generally from fried gram after milling and sieving. It can be in 500 gms pack to 50kg-100kg. Packaging material may be of polythene or polythene lined gunny bag. Basic raw material required for this produce gram only. For processing machine require, dry frier, grinder sieving and packing machine. It can be stored in dry place at room temperature about six months. Using and demand of the product in our country increase about 8-10% per annum. It should be free from adulteration, since it is directly used as food. It is powdery material, pale yellow in colour. It has very good acceptable flavour and odour. It can be easily handle and it can be transfer easily also. There is no problem in storing.
