INTRODUCTION
Fruit Juices being rich in essential minerals, vitamins and other nutritive factor, they are quite popular. Besides, they are delicious and have universal appeal unlike other beverages.
The nutritive value of real fruit beverages is far greater than of synthetic products which are at present being bottled and sold in large quantities through out the country. If real fruit juice could be substituted for these synthetic preparation, it would be a boom to the consumer as well as the fruit grower. There is, therefore, great scope in the country for the production of fruit juices and other fruit-based beverages.
When the rapid progress in fruit farming that has taken place during the last two decades fresh fruit juices, like orange, pine apple, apple etc. are being increasingly sold by vendors in some of the larger town. The demand for fresh fruit juice is on the increase but these cannot be had easily, when the fruit are out of season. Fruit juices have, therefore, to be preserved in a form in which they can be made available to the public during the off season.
Now-a-days, however on account of the common use of fruit juice as breakfast food, a large variety of them is produced on a big scale from fruits such as orange, pineapple, grape fruit, apple and grape.
Fruit Juices, especially orange, apple and grape juices, are concentrated using modern equipment using modern equipments so that there is practically very little loss in their nutritional properties and flavour characteristics.
Orange juice is a very refreshing and nutritious for the well-being of the human body. It is very palatable and is relished by all young and senile, as well as children.
It is also commonly served in parties, functions, social functions and get-togethers.
It is a good commercial item of food stuff.
