INTRODUCTION
Apple Juice is one of the important nutritive non-carbonated fruit juice which is most vital for human body. It keeps the people, young, old, children of different age, healthy. It is a suitable natural drink and very good for consumption purpose. It is a substitute for tea, coffee, synthetic cold drink, carbonated beverage, alcoholic beverage etc.
In India, cold drinks are in demand practically throughout the year. Among these, fruit juices have an important place. Being rich in essential minerals, vitamins and other nutritive factors, they are quite popular. Besides, they are delicious and have universal appeal unlike other beverages.
The nutritive value of real fruit beverages is far greater than that of synthetic products which are at present being bottled and sold in large quantities throughout the country. The annual production of carbonated beverages like lemonade, orangeade, strawberry, lime juice, etc. as well as various kinds of sherbet and other artificially flavoured beverages runs into several million bottles. If real fruit juices could be substituted for these synthetic preparations, it would be a boon to the consumer as well as to the fruit grower. There is, therefore, great scope in the country for the production of fruit juices and other fruit-based beverages.
With the rapid progress in fruit farming that has taken place during the last two decades, fresh fruit juices are being increasingly sold by vendors in some of the larger towns. The demand for fresh juices is on the increase, but these cannot be had easily, when the fruits are out of season. Fruit juices have, therefore, to be preserved in a form in which they can be made available to the public during the off-season.
